An ice cream scoop is essential. If you don’t know this magic trick already – it will change your life (well the baking part anyway).  Use an ice cream scoop to fill muffin and cupcake tins and patty pans.  Every scoop will be the same size, it’s much MUCH faster and far less messy than the traditional spoon method.  When you buy your ice cream scoop just make sure you get one with a slide mechanism that runs along the inside of the scoop from one side to the other so the mix comes out easily.  Rather than one designed to push a solid scoop of ice cream out.
